Ingredients
- 8 Oz. - Portsim Mahi Mahi Prtn Skls BLO VP 8 oz
- 3 Oz. - Pico de Gallo Fresh
- 1 Oz. - Char Crust SW Spicy Smoke
- 1 Oz. - Pineapple Golden Ripe Xsweet
- 4 Oz. - Spanish Style Rice
Instructions
- In a 350 degree oven, prepare spanish style rice per the instructions on the box.
- Season Mahi with Char Crust seasoning and cook on the grill. 4 minutes per side, turning to achieve grill marks.
- Mix diced pineapple with pico de gallo.
- To Plate: place a 1/2 cup of rice in the center of the plate. Top the rice with the finished Mahi Mahi. Garnish with the pineapple pico de gallo and fried tortilla strips.
