Tropical Mahi Mahi

Ingredients

  • 8 Oz. - Portsim Mahi Mahi Prtn Skls BLO VP 8 oz
  • 3 Oz. - Pico de Gallo Fresh
  • 1 Oz. - Char Crust SW Spicy Smoke
  • 1 Oz. - Pineapple Golden Ripe Xsweet
  • 4 Oz. - Spanish Style Rice

Instructions

  1. In a 350 degree oven, prepare spanish style rice per the instructions on the box.

  2. Season Mahi with Char Crust seasoning and cook on the grill.  4 minutes per side, turning to achieve grill marks.

  3. Mix diced pineapple with pico de gallo.

  4. To Plate:  place a 1/2 cup of rice in the center of the plate.  Top the rice with the finished Mahi Mahi.  Garnish with the pineapple pico de gallo and fried tortilla strips.
